beef:
Roast 2 kg whole piece of beef at 75 c until it reaches 55 to 60 c (2 to 4 hours).
Slice.
Serve with flavored butter by beating 2 cups of unsalted butter until creamed with ‘some’ of the following:
1 cup of chopped herbs such as parsley chives and tarragon.
2 to 4 tablespoons truffle paste.
2 to 6 cloves chopped garlic.
1 teaspoon miso.
a few splashes of liquid smoke.
a few splashes of spirits.
½ teaspoon finely grated lemon zest.
1 teaspoon fresh lemon juice.
¼ teaspoon pepper.
